This white wine is Vassaltis's classic Santorini, 100% assyrtiko from across the island, giving priority to old vines of 60 years and more. The grapes are pressed as whole clusters and fermented in stainless steel. The wine then rests on its lees in steel for around 8 to 10 months with frequent stirring. It is the estate's most direct expression of Santorini's volcanic soils.

It pours a pale lemon, opening with lemon zest, white flowers, and wet stone. On the palate, the medium-bodied frame balances crisp citrus with a rounded texture from the lees. A salty, flinty mineral note sits underneath. Vibrant acidity keeps it taut and refreshing. It finishes long, saline, and clean.
