Vassaltis PetNat
VassaltisGrape: Savatiano
Vintage: NV
Type: Sparkling
This sparkling wine is a dry pét-nat made by Vassaltis on Santorini from savatiano, a white grape of mainland Greece, using the ancestral method. The wine is bottled before it finishes fermenting, so the trapped carbon dioxide creates natural bubbles. The sediment is removed and the bottles are topped up with still wine. It is left unfiltered to keep its flavor, so some cloudiness and tartrate crystals are normal.
It pours a hazy pale lemon with fine, soft bubbles, opening with green apple, lemon, and white flowers. On the palate, the light-bodied frame balances crisp orchard fruit with a gentle, yeasty note. A pronounced salinity sits underneath. Fresh acidity keeps it bright and quenching. It finishes dry, clean, and refreshing.
