This white wine is 100% assyrtiko from a single vineyard in the village of Vourvoulos, on the north side of Santorini. The grapes are hand-picked before dawn and pressed right away. The 2023 was aged about 15 months in stainless steel on its lees, then another 7 months in bottle before release. Gramina was first made in 2017, and production is around 5,500 numbered bottles.

It pours a pale lemon-gold, opening with lemon, white peach, and crushed volcanic stone. On the palate, the medium-to-full-bodied frame balances ripe citrus with a creamy texture from the long lees aging. A saline, flinty note sits underneath. A taut, electric line of acidity runs through the center. It finishes long, salty, and precise.
