This Rosato is a truly special wine in many ways. To me, it’s more like a savory Cerasulo di Abruzzo. It’s made from the Erbanno grape, part of the Lambrusco family. It has great texture, a fuller body, it dominated by a savory, earthy, mineral profile. It is delicious in a very northern Italian way. Delicious on its own but can certainly hold its own with food.
Togni Rebaioli is Enrico Togni's mountain-wine project in Valcamonica, Lombardy, founded from the recovery of old family vineyards around Erbanno near Darfo Boario Terme. The steep terraces make machine work nearly impossible, so farming is largely manual and guided by organic and biodynamic principles. Local and regional varieties, including Erbanno and Nebbiolo, are fermented spontaneously and aged in cement or old wood with minimal additions. The wines are small-production, alpine and savory, carrying the freshness, herbs and vertical energy of a valley better known for rock carvings and mountains than for polished commercial wine.
