This traditional Vin Jaune is a pure varietal expression of the savagnin grape produced by Stéphane Tissot in Arbois. The fruit is harvested from the En Spois vineyard, an organic plot characterized by rich Trias clay soils that concentrate minerals. The winemaking features an extended oxidative maturation process, aging for over six years under a natural veil of flor yeast in neutral barrels. This zero-makeup process focuses on structural integration, allowing the wine to develop shelf-stable depth naturally.
It pours a deep gold color, releasing complex aromas of roasted nuts, dried apricots, and smoky peat notes. On the palate, the full-bodied, robust frame delivers a powerful dry structure balanced by a notable saline and mineral depth. Savory layers of iodine and tobacco leaf fold into a dense mouthfeel that shows great complexity. A clean thread of lemony acidity cuts through the volume, maintaining an invigorating crispness.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
