This white wine is a traditional expression of the indigenous savagnin grape grown on the gray marl soils of Arbois. Stéphane and Bénédicte Tissot manage the vineyards using strict biodynamic methods to enhance natural acidity. In the cellar, the fruit undergoes spontaneous fermentation with native yeasts and is aged under a veil of wild yeast, known as sous voile. This controlled oxidative process lasts for several years in neutral oak casks to build deep structural stability.

It pours a deep gold-straw color, opening with complex aromas of preserved lemon, green apricot, honey, and dried herbs. The palate is medium-bodied and texturally dense, balancing a nutty volume with a sharp line of mountain acidity. Savory flavors of walnut shell, sourdough bread, and wet stone dominate the mouthfeel. A pleasant mineral bitterness develops on the back end, adding structural definition. It finishes completely dry and long, leaving a mouthwatering saline trace.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

They produce truly unique, terroir-driven natural wines, wines we love, admire, and cherish. These are without doubt some of our most prized wines. 

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
