This white wine is a regional blend of chardonnay crafted by Stéphane and Bénédicte Tissot from various old-vine parcels up to sixty years old. The grapes grow on a combination of clay and limestone soils across Arbois, farmed under certified biodynamic practices. Spontaneous fermentation relies entirely on native wild yeasts in neutral French oak barrels. Aged for twelve months in topped-up casks, it delivers a fresh, fruit-driven, and mineral-driven varietal expression.

It pours a pale straw color with silver highlights, opening with fresh aromas of lemon zest, green apple, and white flowers. On the palate, a medium-bodied frame balances orchard fruit flavors with an underlying flinty reduction. A sharp, central thread of natural acidity cuts through the volume, maintaining excellent freshness. The texture is clean and fluid, showing a distinct element of chalky minerality. It finishes completely dry and long, leaving a mouthwatering saline trace.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

They produce truly unique, terroir-driven natural wines, wines we love, admire, and cherish. These are without doubt some of our most prized wines. 

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
