Sourced from a single vineyard plot characterized by limestone-rich gravel soils, this white wine highlights a site-specific expression of chardonnay in Arbois. Stéphane and Bénédicte Tissot manage the old vines under strict biodynamic farming protocols. The hand-picked grapes undergo spontaneous native yeast fermentation in neutral French oak barriques. Aged in topped-up barrels for over a year, this cuvée preserves structural tension and natural mineral components without oxidative character.
It displays a bright straw-yellow color, releasing aromatics of candied lemon, fresh peach, and white flowers. On the palate, a medium-bodied frame pairs concentrated citrus flavors with a chiseled, crystalline mineral core. A racy vein of natural acidity cuts right through the slightly creamy texture, keeping the mouthfeel lively. Subtle notes of woodsmoke, roasted almond, and fresh butter add depth to the mid-palate. It finishes long and dry, leaving a salty, persistent mineral impression.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
