Sourced from vines up to eighty years old, this chardonnay comes from a south-facing slope of clay and blue marl in Arbois. Stéphane and Bénédicte Tissot manage the single vineyard using strict certified biodynamic farming methods. The fruit undergoes spontaneous fermentation with native yeasts and ages for twenty-four months on fine lees in French oak barrels. Utilizing the topped-up method known as ouillé, this bottling delivers an authentic regional identity.
It displays a bright straw color, releasing aromas of ripe stone fruit, green apple, and flinty reduction over a smoky mineral background. On the palate, the medium-to-full body is concentrated and balanced, pairing a creamy texture with a sharp beam of saline acidity. Savory flavors of dried pear and toasted nuts develop nicely as the wine opens up. The old-vine concentration keeps the mouthfeel structured, clean, and lively throughout. It finishes dry and long, leaving a lingering mineral impression.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
