This sparkling rosé is a traditional regional blend of pinot noir, poulsard, and trousseau from biodynamic Arbois vineyards. Winemakers Stéphane and Bénédicte Tissot utilize low-intervention practices to handle the fruit, which grows on calcareous clay soils. The wine is vinified using the traditional method, undergoing a native yeast fermentation followed by extended aging on its lees. Bottled in the dosage zero style, this cuvée avoids added sugar to let the raw regional identity speak.

It radiates a pale salmon-pink hue with clear clarity and a persistent mousse. The nose is open and fresh, offering aromas of wild strawberry, fresh cream, and crushed rock. On the palate, the light-bodied frame is dry and precise, balancing crunchy red fruit with a distinct mineral salinity. A bracing wave of limestone acidity runs through the mid-palate, keeping the mouthfeel lively. It finishes clean, dry, and mouthwateringly light on its feet.

Winery

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
