Sourced from a tiny selection of biodynamic plots in the Côtes du Jura, this red wine reflects a pure expression of pinot noir from a low-yield season. Stéphane and Bénédicte Tissot utilize hands-off cellaring practices, avoiding synthetic additives and commercial yeast cultures. The hand-harvested fruit ferments spontaneously in neutral wooden vats to capture site transparency. The wine matures for a year in neutral French oak barrels to build structural harmony without wood dominance.

It displays a bright, translucent ruby color, releasing delicate aromas of fresh cherry, wild raspberry, and field flowers. On the palate, a medium-bodied, sleek frame pairs crisp red berry flavors with a fine, chalky mineral undercurrent. Subtle notes of earthy spice and dried herbs add depth across the mid-palate volume. A racy vein of mountain acidity cuts through the texture, keeping the fluid mouthfeel completely fresh. It finishes long, dry, and clean, leaving a persistent mineral trace.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
