This dry white Burgundy wine is an artisanal look at the aligoté grape produced by young winemaker Théo Dancer. Sourced from a premier plot of organic old vines in Meursault, the fruit develops a high natural concentration and structural poise. The winemaking utilizes a low-intervention approach, allowing the juice to ferment spontaneously with native wild yeasts inside large-format oak barrels. It undergoes a natural maturation process, resting undisturbed on its full fermentation lees without any mechanical stirring or filtering.
It pours a bright straw-yellow color, releasing refined aromas of golden apple, fresh pear, white apricot, and a savory leesy touch. A sleek, medium-bodied frame balances generous fruit profiles with an underlying chiseled mineral core. A lively wave of natural acidity cuts through the center of the wine, providing excellent vertical lift and buoyancy. The texture remains exceptionally fresh yet refined, showcasing its old-vine pedigree across the tongue.
Theo Dancer is the personal label of Theo Dancer, son of the respected Chassagne-Montrachet vigneron Vincent Dancer. While grounded in Burgundy's culture of precision, Theo's project is broader and freer, sourcing fruit from Burgundy as well as other French regions where he finds compelling vineyards. The wines are made in small quantities with native yeasts, careful elevage and a style that prizes line, fragrance and drinkability. They show a young winemaker engaging with inheritance without being trapped by it, using a Burgundy-trained palate to make wines that are polished, energetic and often more playful than the family domaine.
