Sourced from an organic plot of old vines in Meursault, this white wine represents a fresh look at Aligoté by Théo Dancer. Hand-harvested clusters undergo a whole-cluster pressing before transferring to seasoned 350-liter oak barrels. Fermentation unfolds spontaneously with native yeasts, aging on fine lees without bâtonnage or temperature controls. Settled in tank before an unfiltered bottling, this cuvée captures a precise snapshot of village terroir.

It displays a pale straw-yellow hue, releasing aromas of golden apple, ripe pear, peach blossoms, and lemon zest. On the palate, a pulp-textured, medium-bodied frame pairs generous orchard fruit with a savory, leesy depth. A sharp beam of natural acidity cuts through the center, keeping the fluid mouthfeel energetic and lithe. Subtle notes of fresh almond and wet stone add complexity across the mid-palate. It concludes bone-dry, leaving a lingering, mouthwatering trace of ocean salinity.

Theo Dancer is the personal label of Theo Dancer, son of the respected Chassagne-Montrachet vigneron Vincent Dancer. While grounded in Burgundy's culture of precision, Theo's project is broader and freer, sourcing fruit from Burgundy as well as other French regions where he finds compelling vineyards. The wines are made in small quantities with native yeasts, careful elevage and a style that prizes line, fragrance and drinkability. They show a young winemaker engaging with inheritance without being trapped by it, using a Burgundy-trained palate to make wines that are polished, energetic and often more playful than the family domaine.
