This dry white wine represents Mikey Giugni's un-makeup look at classic Santa Maria Valley terroir through a Chablis-inspired winemaking lens. The chardonnay grapes are harvested manually early in the season from vineyards characterized by deep alluvial loam and limestone topsoils. Spontaneous fermentation occurs with native wild yeasts in neutral French oak barrels, avoiding modern technological adjustments or adjustments. It matures on its fine lees to develop structural harmony, building a smooth texture without oak flavor dominance.

It displays a bright straw color with silver highlights, releasing refined aromas of lemon zest, granny smith apples, and pineapples. A medium-bodied frame balances orchard fruit flavors with an underlying chiseled, salty minerality. A clean, well-integrated line of natural acidity cuts right through the smooth texture, providing excellent lift and refreshing energy. Subtle notes of toasted almond and a light hint of butterscotch add depth without feeling heavy. It finishes long, dry, and clean.

Scar of the Sea is the coastal California project of Mikey and Gina Giugni, focused on vineyards shaped by ocean influence, old vines and patient farming. Based on the Central Coast, the winery works with Pinot Noir, Chardonnay, Syrah, Gamay and cider apples from sites in San Luis Obispo, Santa Barbara and beyond. The name points to the Pacific's constant mark on the landscape: fog, wind, salt and cool light. Fermentations are native, extraction is gentle and the wines favor energy over weight. Scar of the Sea helped define a more transparent, maritime style for modern California wine.
