This premier cru grower Champagne is a unique blend combining forty-five percent pinot meunier, thirty percent chardonnay, and twenty-five percent pinot noir. Sixty percent of the cuvée relies on a mature base harvest, while the remainder draws from a single fifty-hectoliter solera foudre. Spontaneous fermentation relies on native wild yeasts in neutral vessels, avoiding modern adjustments. It undergoes traditional secondary fermentation and extended bottle aging before a low-dosage disgorgement of four grams per liter.

It pours a pale gold hue with a highly persistent, fine mousse that coats the mouth evenly. The nose is open and evolved, offering complex aromatics of cooked apple, toasted brioche, dried pears, and hazelnuts. A medium-to-full-bodied frame pairs a rich, creamy texture with a sharp beam of limestone acidity. Savory layers of autolytic notes fold into a dense, texturally satisfying mouthfeel that shows excellent balance. It finishes clean and dry, leaving a lingering, mouthwatering trace.

Champagne Pascal Mazet

Catherine and Pascal Mazet established their domaine in 1981 with 2.5 hectares from her side of the family—enviable holdings in premier cru land on the Montagne de Reims communes Chigny-les-Roses and Ludes, and a grand cru parcel in Ambonnay.

At age of twenty-seven, Olivier Mazet took full control in 2018. Olivier’s long view is focused on agroforestry to improve biodiversity in and around the vineyards to help their resilience against disease, improve soil structures by letting nature do a lot of the work.

Certified organic since 2009, this family house is distinguished by the care taken in the aging of its wines. It combines vinification in oak barrels with a minimum aging of 5 years for each of the cuvées. The result is simply splendid organic grower champagne.
