This small-production white wine represents the pinnacle expression of old-vine sauvignon blanc produced by Nicolas Barbou in Touraine. The fruit hails from ancient vines rooted deeply in complex siliceous sand and clay soils in Oisly. Vinification utilizes a gentle press followed by a completely spontaneous fermentation driven by native vineyard wild yeasts inside neutral French oak barrels. It undergoes a prolonged maturation on its fine lees for up to two years before an unfiltered bottling.

It displays a bright straw color, releasing complex aromas of yellow plum, chamomile blossoms, preserved lemon, and a flinty reduction. On the palate, the full-bodied, structured frame balances a concentrated fruit core with a sharp line of limestone acidity. Savory flavors of fresh pear and citrus oil seamlessly wrap around a texturally detailed, dense mouthfeel. A strong vein of maritime salinity cuts through the center, keeping the profile fresh. It finishes long, dry, and persistent.
