This innovative sparkling beverage is an artisanal low-intervention blend produced by the fermentation studio Muri in Copenhagen. The complex recipe incorporates a carbonic raspberry and gooseberry mead, smoked lacto-fermented rhubarb, goldenrod botanicals, and pink peppercorn kefir. The elements are fermented using wild ambient cultures and native yeasts to develop natural carbonation and structural layers. The liquid settles naturally without synthetic additions or chemical adjustments, creating a completely unique alternative to traditional sparkling styles.
It displays a soft red-pink color with a delicate mousse, opening with aromas of fresh red fruits and creamy smoke. On the palate, the light-bodied frame is refreshingly dry and approachable, balancing playful flavor complexities with a subtle vinous funkiness. Tart raspberry and tangy rhubarb flavors interweave with a distinct, spicy undercurrent from the pink peppercorn. A crisp wave of fermentation acidity runs through the center, keeping the texture clean. It concludes with a delicate, aromatic finish.
Muri is a Copenhagen-based non-alcoholic fermentation house that borrows as much from wine, cider, kombucha and gastronomy as from the drinks industry. Founded by Murray Paterson, the project creates complex, wine-adjacent beverages from ferments of fruits, teas, herbs, grains and botanicals, often layering different bases the way a winemaker might blend parcels. Muri is not trying to imitate a single grape variety. Instead, it builds drinks around acidity, tannin, aroma and texture, making bottles that can sit naturally at the table with food and satisfy the same curiosity as low-intervention wine.
