This low-intervention sparkling beverage is an innovative blend crafted by the fermentation experts at Muri in Copenhagen. Bypassing traditional wine grape viticulture, the production utilizes red currants, black currants, chamomile kefir, fig leaf, and pine needle kvass. The components undergo separate ancestral fermentations driven entirely by wild cultures and native yeasts to build natural effervescence and phenolic complexity. The final liquid is blended meticulously and bottled entirely unfiltered without modern synthetic flavorings or forced industrial additions.

It pours a dark red color with a lively, fine stream of bubbles, showing a fun-yet-grown-up flavor profile. The nose opens with intense aromas of forest berries, dried chamomile flowers, and fresh pine needles. A lightweight and crisp mouthfeel pairs tart currant flavors with a distinct savory depth from the malt. A sharp wave of natural fermentation acidity cuts through the texture, keeping the mouthfeel thoroughly refreshed. It finishes bone-dry and clean.

Muri is a Copenhagen-based non-alcoholic fermentation house that borrows as much from wine, cider, kombucha and gastronomy as from the drinks industry. Founded by Murray Paterson, the project creates complex, wine-adjacent beverages from ferments of fruits, teas, herbs, grains and botanicals, often layering different bases the way a winemaker might blend parcels. Muri is not trying to imitate a single grape variety. Instead, it builds drinks around acidity, tannin, aroma and texture, making bottles that can sit naturally at the table with food and satisfy the same curiosity as low-intervention wine.
