This unfortified white wine comes from a zero-point-nine hectare west-facing single vineyard plot cultivated under strict biodynamic viticulture guidelines. A collaborative Andalusian project between Alejandro Muchada and David Léclapart, the winemaking focuses on capturing raw coastal freshness from old-vine palomino. Spontaneous fermentation occurs with native wild yeasts inside neutral tanks, completely bypassing traditional sherry fortification or flor contact. The wine matures for eleven months in stainless steel followed by eight months of bottle settling.

It pours a pale straw color, releasing clean aromatics of fresh citrus rind, green apple, and white flowers. On the palate, the light-to-medium body is remarkably fresh and elegant, focusing on a precise, un-oaked fruit presentation. A racy line of maritime acidity runs through the center, keeping the fluid mouthfeel thoroughly refreshed. Subtle notes of crushed limestone and a distinct sea salt salinity develop beautifully across the tongue. It finishes bone-dry and persistent.

Muchada-Leclapart is the meeting of Marco Antonio Muchada's Andalusian roots and David Leclapart's Champagne sensibility. Based in Sanlucar de Barrameda, the project works old Palomino vines on albariza soils, farming biodynamically and seeking still white wines that express the chalk, Atlantic wind and light of Jerez country without fortification. The cellar work is deliberately simple: native fermentations, no heavy oak, long lees contact and very low additions. These wines helped redefine what Palomino could be outside the Sherry category, showing salinity, texture and luminous restraint rather than oxidative power.
