This dry white wine comes from high-altitude plots situated at the foot of the Andes in Gualtallary. Winemakers Eduardo Michelini and Andrea Mufatto select chardonnay fruit from the La Cautiva sub-region, characterized by calcium carbonate soils. The hand-picked grapes are macerated on their skins for five days and undergo a completely spontaneous fermentation driven by native wild yeasts. It matures naturally in neutral vessels to capture the intense mineral components driven by the mountain geology.

It pours a bright straw color, releasing clear aromatics of green apple, fresh pear, and delicate white blossoms. On the palate, a sleek, medium-bodied frame balances crisp orchard fruit flavors with an underlying chiseled, chalky core. A lively wave of natural acidity cuts through the texture, maintaining great freshness and an athletic energy. The brief skin contact provides a subtle structural grip that frames the clean mouthfeel nicely. It finishes completely bone-dry and persistent.

Michelini i Mufatto is the cross-Andean project of Andrea Mufatto, Gerardo Michelini and Manuel Michelini, linking Argentina's Uco Valley with Bierzo in northwest Spain. Their work is built around old vines, high elevation, native yeasts and a preference for wines that are transparent rather than forceful. In Argentina they explore mountain sites through varieties such as Malbec, Semillon and Cabernet Franc; in Bierzo they work with old Mencia and white field blends on steep, complex soils. Across both continents the style is delicate, floral and mineral, showing a family more interested in listening to vineyards than imposing a house signature.
