This island red wine is a traditional regional blend crafted from Listán Negro grapes harvested by hand across Lanzarote. Pablo Matallana coordinates multiple small plots where the ungrafted old vines grow inside deep, stone-walled pits dug into porous volcanic ash. The winemaking utilizes low-intervention protocols, allowing a spontaneous fermentation driven by native wild vineyard yeasts in neutral tanks. The liquid matures for several months in a combination of stainless steel vats and seasoned oak barrels before an unfiltered bottling.

It pours a translucent ruby color, opening with high-toned aromatics of red cherry, cranberry, wild thyme, and sweet volcanic smoke. On the palate, the light-to-medium-bodied frame is fluid and focusing on an unmanipulated, fresh fruit presentation. Fine-grained, soft tannins provide an understated structural grip that coordinates with a clean wave of coastal acidity. Savory underscores of ground black pepper and ash add depth across the fluid core.

Pablo Matallana is one of the most thoughtful young voices in the Canary Islands. Based on Tenerife and trained through both enology and serious field work, he has become known for recovering old vineyards and working with traditional varieties such as Listan Negro, Listan Blanco and Vijariego. His parcels often sit on volcanic soils in dramatic, wind-shaped landscapes, where farming is laborious and yields are naturally modest. In the cellar he favors native yeasts, gentle extraction and minimal additions. The wines are light on their feet but full of volcanic imprint, combining smoke, herbs, salt and bright Atlantic freshness.
