Presented in a magnum format for slow development, this red wine is made from poulsard grapes grown in biodynamic Arbois plots. Winemakers Stéphane and Bénédicte Tissot utilize low-intervention practices, relying on spontaneous native yeast fermentation. It undergoes an extended aging process on its fine fermentation lees in large neutral casks. This traditional aging method allows the structural components to settle while completely avoiding any new wood or added sulfur makeup.

It pours a pale, clear ruby color, opening with aromas of wild strawberry, red currant, and a hint of white pepper over a damp earth background. On the palate, the light-bodied framework balances a soft, slightly creamy mouthfeel with a sharp line of mountain acidity. Savory flavors of cranberry and red plum interweave with a distinct vein of mineral salinity. The fine-grained, lacy tannins provide a smooth texture that frames mid-palate cleanly. It finishes dry, leaving a clean mineral trace.

Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
