This dry white wine is an unfortified, ancestral expression of palomino fino crafted by Willy Pérez in the Carrascal vineyard of Jerez. The fruit is hand-harvested from rows rooted deeply in pure, chalky albariza soils that naturally lock in high mineral components. The juice ferments spontaneously with native vineyard yeasts in old oak butts, bypassing synthetic temperature control or chemical alterations. The wine ages under a natural film of flor yeast for several years to develop structural depth naturally.
It pours a pale straw-yellow color, releasing complex aromatics of green apple, apricot rind, and distinctive oxidative notes. On the palate, the full-bodied, structured frame balances a broad texture with an underlying chiseled limestone minerality. Savory layers of chamomile flowers and a subtle flor character wrap around a dense mouthfeel. A strong vein of marine salinity cuts right through the center, keeping it fresh. It concludes with an bone-dry, chalky finish.
Luis Perez is one of the key figures in the modern revival of unfortified wines from Jerez. A former professor of enology and a researcher of the region's history, Perez built his project around pagos, albariza soils and forgotten ways of interpreting Palomino and Tintilla de Rota. His work shows that the Sherry triangle is not only about solera and fortification; it can also produce still wines of chalk, flor influence, Atlantic air and remarkable tension. From vineyards such as Carrascal and Balbaina, he crafts bottles that feel both ancient and startlingly new, reconnecting Jerez to its pre-industrial vineyard identity.
