Sourced from late-harvest grapes grown in the volcanic ash trenches of Lanzarote, this sweet white wine avoids added alcohol or synthetic alterations. The overripe malvasía volcánica grapes are pressed and fermented slowly until the native vineyard yeasts stop naturally, leaving high residual sugars. It ages in French Allier oak casks using a traditional solera system to encourage structural integration. This disciplined process yields a texturally driven dessert wine that highlights a transparent look at volcanic terroir.

It pours a deep golden-amber hue, opening with expressive aromas of tropical flowers, dried apricot, and sweet fruit compote. On the palate, the full-bodied frame is rich and velvety, balancing intense flavors of papaya and custard apple. A sharp streak of volcanic minerality cuts right through the unctuous texture, keeping the mouthfeel balanced and fresh. Bodega Los Bermejos is a winery on the volcanic island of Lanzarote in the Canary Islands, known for its unique, "heroic" viticulture. Founded in 2001, the estate specializes in producing high-quality wines from indigenous grapes in a challenging, lunar-like landscape of black volcanic ash. Following an 18th-century volcanic eruption that covered the island in ash, vines are planted in individual, hand-dug craters called hoyos. The porous volcanic soil and low rainfall create a challenging but nutrient-rich environment for the vines, resulting in very low yields and highly concentrated fruit.
