This dealcoholized sparkling white beverage is a pure varietal expression of the picpoul blanc grape produced under a low-intervention approach. The fruit is harvested manually from California rows pack with sandy soils, capturing a varietal identity and structural energy. Following a native yeast primary fermentation inside stainless steel tanks, the liquid undergoes vacuum distillation to pull the alcohol while protecting the volatile aromatics. The final beverage is lightly carbonated and bottled unfined and unfiltered.
It radiates a pale straw color with a fine stream of bubbles, releasing aromatics of fresh pear, green apple, and citrus rind over a baseline of warm toast. On the palate, the light-bodied frame is crisp and zesty, balancing orchard fruit flavors with an underlying stony minerality. A clean line of natural acidity drives across the tongue, keeping the profile fluid. A touch of sweetness frames finish nicely without introducing heavy syrupy weight. It finishes dry.
Revel began as Tariq Ahmed's fascination with wild fermentation and has grown into one of Canada's most original cider and fruit-wine projects. Based in Guelph, Ontario, Revel works with apples, grapes, berries, flowers, herbs and foraged botanicals from the region, fermenting them spontaneously and often aging them in oxidative vessels. The results blur the line between cider, wine, vermouth and botanical drink, but they always return to the same idea: capturing the fleeting character of Ontario fruit and plant life. Revel's bottles are vivid, textured and sometimes strange in the most generous way, made for curious drinkers.
