This white wine is the Grande Cuvée sauvignon blanc of Valentin Desloges's Les Quatre Piliers in Noyers-sur-Cher, Touraine, the step up from his Chapitre I. It comes from the domaine's oldest vines and is raised longer in barrel on its lees. It is bottled unfiltered, so a light sediment is normal. The domaine recommends decanting it for an hour before serving.

It pours a bright golden straw, opening with ripe citrus, quince, and struck flint. On the palate, the medium-to-full-bodied frame balances concentrated fruit with a rich, textured mid-palate. Smoke, wet stone, and a hint of toasted hazelnut sit underneath. The cool 2021 vintage keeps the acidity tense and focused. It finishes long, saline, and complex.
