This white wine is a pure varietal expression of chenin blanc sourced from two plots within the Clos des Molières site in Jasnières. Winemakers Elisabeth and Pascal de Bonnet farm the thirty-year-old rows under strict certified organic viticulture guidelines on clay-limestone soils loaded with flint. The hand-harvested grapes are pressed slowly and undergo a spontaneous native fermentation driven by wild vineyard yeasts inside seasoned oak barrels. The liquid matures for fourteen months in wood and is bottled unfiltered without any added sulfur.

It displays a bright yellow-straw color, releasing refined aromas of bruised apple, citrus rind, and cold matchstick reduction. A medium-bodied frame balances orchard fruit flavors with a chiseled mineral undercurrent. A lively wave of natural acidity cuts right through the slightly waxy mouthfeel, maintaining great freshness. The neutral wood contact provides a structural cushion that shapes the center cleanly without heavy oak notes.
