This sparkling white wine is crafted using the méthode ancestrale from thirty-five-year-old chardonnay vines within the Chablis appellation. The name directly references the total number of days required to produce the wine from initial growing season to cellar release. The alcoholic fermentation begins in stainless steel vats and finishes directly inside the bottle to capture natural carbonation. It undergoes thirty-six months of maturation on its fine lees before a zero-dosage disgorgement.

It displays a bright straw color with a very fine, persistent bead, releasing refined aromas of citrus fruit and delightful toast. On the palate, the medium-bodied frame is serious and structural, balancing a full fruit core with an underlying high mineral tension. Subtle notes of exotic fruits interweave with a distinct vein of marine salinity across the mid-palate. A clean wave of natural acidity cuts through the texture, keeping it fresh. It concludes bone-dry.

Le Domaine d'Henri is Michel Laroche's family estate in Chablis, created after he stepped away from the larger Domaine Laroche to return to a more intimate, vineyard-focused scale. Named for his father Henri, the domaine works 22 hectares, including important holdings in Fourchaume and Beauroy, alongside Chablis and Petit Chablis parcels. The project draws on generations of family experience while emphasizing careful farming, precise vinification and the transparent expression of Kimmeridgian limestone. Its Chardonnay is typically poised and mineral, balancing Chablis's citrus and chalk with texture, quiet richness and the ability to age.
