J. Lassalle Cachet Or Premier Cru Brut NV
J. LassalleGrape: Pinot Meunier, Chardonnay, Pinot Noir
Vintage: NV
Type: Sparkling
Sourced from Premier Cru vineyards around Chigny-les-Roses in the Montagne de Reims, this classic estate-grown sparkler blends equal parts pinot meunier, chardonnay, and pinot noir. The three-generation, all-female-led domaine ferments each plot separately in stainless steel, then passes the wine through full malolactic fermentation to soften the structure. The blend ages on its fine lees in the cellar for 3 to 4 years before disgorgement, then finishes with a balanced dosage of 8 to 9 g/L of residual sugar. This is a round, harmonious Montagne de Reims Brut defined by its leesy depth and creamy balance.
It pours a pale straw-gold with a continuous, ultra-fine bead of bubbles. Aromas of fresh pear, Mirabelle plum, brioche, and white blossom give way to a rounded palate filled with golden apple, lemon curd, and toasted almond. The 8 to 9 g/L dosage softens the vibrant natural acidity, weaving seamlessly into the supple, velvety mid-palate texture. It finishes with a broad, clean impression of citrus zest and chalky limestone.
Champagne Mouzon-Leroux is a grower estate in the Grand Cru village of Verzy, led by ninth-generation vigneron Sébastien Mouzon. Since taking over in 2008, Sébastien has converted the family's vineyards to organic and biodynamic farming while embracing agroforestry, aromatic plants, animals and homemade herbal preparations to strengthen the life of the soil. Pinot Noir and Chardonnay lead the plantings, joined by Champagne's rarer historic varieties. The wines are fermented with native yeasts and shaped with a light hand, combining Verzy's chalky tension with depth, savory character and a distinctly living sense of place.
