This sparkling white wine is crafted from biodynamically grown chenin blanc grapes by the historic Domaine Huet in Vouvray. Vinified using the traditional method, the base wine undergoes a spontaneous fermentation driven by native wild yeasts in neutral vessels. The wine matures on its fine fermentation lees in subterranean tuffeau caves to build structural complexity before a clean disgorgement. This low-intervention process focuses on capturing regional mineral tension rather than simple commercial fruit sweetness.

It pours a bright straw-yellow color with a fine, discreet mousse on the medium-bodied palate. The nose opens with enticing aromas of orange blossoms, fresh chamomile, and warm toasted baguette. On the palate, a soft yet structured mouthfeel delivers crisp orchard fruit flavors alongside a touch of salty minerality.
