Sourced from old-vine savagnin parcels situated near the village of Nevy-sur-Seille, this topped-up or ouillé cuvée highlights François Rousset-Martin's focused, site-specific approach in the Jura. The hand-harvested fruit ferments spontaneously with native yeasts in neutral wooden casks, where it undergoes an extended aging period on its fine lees with regular topping up to avoid oxidative flor formation. Bottled unfined and unfiltered with minimal sulfur, the winemaking focuses on raw varietal purity and structural tension. This is an elegant, highly tactile expression of Côtes du Jura savagnin that balances generous fruit with chiseled mineral drive.

It shows a deep straw-gold hue and opens with fragrant aromas of lemon peel, yellow pear, crushed almond, and wet limestone. The palate is rich and concentrated, delivering flavors of preserved citrus, white peach, and wild herbs, framed by a silky, leesy weight on the mid-palate. Electric natural acidity cuts straight through the texture, giving the liquid a clean, linear focus from start to finish. It concludes on a long, mouthwatering finish defined by a burst of grapefruit pith and persistent sea salt.

Since the family's first harvest in 1973, they have grown into a 20-hectare estate, now run by Sébastien Cartaux and his wife, Sandrine. The winery is known for its traditional and organic winemaking, showcasing the unique character of the Jura region. The Cartaux-Bougaud tradition started with Anne-Marie Bougaud and Guy Cartaux, who committed to winemaking in the 1980s and acquired the historic Château de Quintigny. The second generation took over in 1993, modernizing the business while upholding tradition. The estate was certified organic in 2022, following decades of practicing sustainable viticulture.
