Sourced from the steep, limestone-rich "Sous-Roche" parcel in Château-Chalon, this topped-up or ouillé savagnin is crafted by François Rousset-Martin from old vines grown on gray marl. The fruit ferments spontaneously with native yeasts in neutral oak barrels, undergoing a long maturation on its fine lees with regular topping up to prevent oxidative flor development. Bottled with minimal sulfur and without fining or filtration, the winemaking isolates the intense mineral tension of this specific slope. This is a focused, chiseled expression of Côtes du Jura savagnin that balances raw power with electric acidity.
It presents a deep straw-gold color, opening with intense aromas of preserved lemon, green apple, crushed walnut, and damp slate. The palate delivers driving flavors of yellow plum, white pepper, and salted citrus oil, supported by a dense, textural weight from the long leesy contact. High, electric acidity cuts directly through the wine's rich mid-palate, giving it outstanding vertical drive and balance. It finishes long, dry, and intensely saline, leaving a lasting impression of crushed limestone and grapefruit pith.
Since the family's first harvest in 1973, they have grown into a 20-hectare estate, now run by Sébastien Cartaux and his wife, Sandrine. The winery is known for its traditional and organic winemaking, showcasing the unique character of the Jura region. The Cartaux-Bougaud tradition started with Anne-Marie Bougaud and Guy Cartaux, who committed to winemaking in the 1980s and acquired the historic Château de Quintigny. The second generation took over in 1993, modernizing the business while upholding tradition. The estate was certified organic in 2022, following decades of practicing sustainable viticulture.
