Sourced from the high-elevation, wind-swept sandy plains of Amyntaio in Northwestern Greece, this traditional-method sparkling rosé relies entirely on the bracing acidity of the indigenous Xinomavro grape. Winemaker Laurens Hartman harvests the organic fruit early in the season to preserve structural tension, giving the grapes a brief maceration on the skins to extract a delicate color. The base wine is fermented with native yeasts before undergoing its secondary fermentation in the bottle, spending months resting on its fine lees to build textural complexity. Disgorged with a minimal, precise dosage, this cuvée is a brilliant showcase of cold-climate Mediterranean sparkling winemaking.

In the glass, it glows with a pale, brilliant salmon-pink color and a steady, fine stream of bubbles. The aromatics are remarkably fresh and precise, unfurling with notes of wild strawberry, pomegranate, dried rose petals, and a savory hint of white pepper. On the palate, a "crystalline" shockwave of vibrant acidity cuts right through the delicate red fruit core, keeping the mouthfeel incredibly lively. The fine mousse lends a creamy softness that gently cushions the wine's dry, structured frame. It sails into a long, crisp finish characterized by lingering notes of blood orange zest, wet stones, and a touch of sea salt.

 

Domaine Karanika is Laurens Hartman-Karanika and Annette van Kampen's organic and biodynamic estate in Amyndeon, the cool, high-altitude plateau of northwestern Greece. Drawn to the region's naturally high acidity and old Xinomavro vines, they built the domaine around traditional-method sparkling wine while also producing still wines from Xinomavro, Assyrtiko and other varieties. The winery is largely subterranean and designed to work with the local climate, with solar energy and composting integrated into the farm. Karanika's wines are precise, dry and vibrant, establishing Xinomavro as a compelling source of serious Greek sparkling wine.
