Crafted by Laurens Hartman and Annette van Kampen at their estate in Amyntaio (within the Florina region of northwestern Greece), this single-vineyard dry white offers a distinctly cold-climate, continental expression of Greece's quintessential white grape. Cultivated organically and biodynamically in the high-elevation "Levea" sub-zone (roughly 650 to 700 meters above sea level), the vines are rooted in sandy limestone and marl soils rich in calcium. Unlike the warm, volcanic maritime terroirs of Santorini, Amyntaio’s cool continental climate preserves piercing natural acidity and fresh aromatic precision. Winemaking follows a non-interventionist approach: native yeast fermentation, aging on the fine lees in stainless steel with no oak influence, and bottling with minimal added sulfur to allow the pure alpine terroir to shine through.

In the glass, it shows a pale, luminous lemon-straw hue with subtle green highlights. The nose opens with crisp, mineral-forward aromas of fresh green apple, lemon peel, crushed chalk, white blossoms, and a subtle hint of dried herbs. On the palate, a "crystalline" core of laser-sharp, mountain-driven acidity cuts cleanly through the wine's medium-bodied, texturally focused mid-palate. Years of bottle age have softened its youthful sharpness into a sleek, harmonized complexity, offering notes of preserved citrus, lemon curd, and wet flint. The finish is exceptionally dry, linear, and refreshing, lingering with a mouthwatering trail of chalky minerals and citrus zest.

 

Domaine Karanika is Laurens Hartman-Karanika and Annette van Kampen's organic and biodynamic estate in Amyndeon, the cool, high-altitude plateau of northwestern Greece. Drawn to the region's naturally high acidity and old Xinomavro vines, they built the domaine around traditional-method sparkling wine while also producing still wines from Xinomavro, Assyrtiko and other varieties. The winery is largely subterranean and designed to work with the local climate, with solar energy and composting integrated into the farm. Karanika's wines are precise, dry and vibrant, establishing Xinomavro as a compelling source of serious Greek sparkling wine.
