This estate sparkling wine is a zero-dosage field blend combining forty-seven percent chardonnay, thirty-one percent pinot noir, fourteen percent pinot meunier, and eight percent pinot gris. Sourced from a single biodynamically farmed vineyard in Wiltshire, the fruit is pressed using a traditional Coquard basket press. The winemaking utilizes spontaneous native fermentation, with ten percent vinified in clay amphorae and the remainder in seasoned Burgundy barrels. It undergoes secondary bottle fermentation and is bottled unfiltered with zero added sulfur.

It displays a pale straw hue with a fine, persistent bead, releasing a distinctive aroma of crisp apple skin and orchard blossoms. A light-bodied, linear frame balances fruity expressions with an underlying chalky mineral core. The mouthfeel is dry and showcasing a low level of alcohol with an admirable fruit concentration. A sharp wave of cool-climate acidity runs through the mousse, providing excellent structural lift.

Domaine Hugo is an English wine producer known for its small-scale, artisanal sparkling wines. The estate is a collaboration between biodynamic viticulturist Hugo Stewart and winemaker Daniel Ham of Offbeat Wines. Following extensive experience with biodynamic farming in France, Hugo Stewart returned to his family farm to establish the winery in 2015. The vineyard is fully organic and biodynamic, focusing on creating a healthy ecosystem by using practices such as natural cover crops and allowing sheep to graze. The winery has earned a strong reputation for quality. It is the only English member of the prestigious biodynamic association Renaissance des Appellations.
