This sparkling white wine is crafted by the established Domaine Huet from biodynamically farmed vineyards in the Vouvray region. The chenin blanc grapes are hand-picked from rows rooted in limestone topsoils over porous tuffeau. Vinification follows the traditional method but with slightly lower pressure than Champagne, utilizing a native yeast primary fermentation. The wine undergoes secondary bottle fermentation and extended aging on its lees in deep chalk cellars to build natural structural stability.
It pours a pale gold color with a fine, persistent stream of bubbles, opening with clean aromas of golden apple, pear, and quince. On the palate, a creamy yet linear mousse delivers crisp flavors of fresh citrus fruit alongside a distinct hint of honeycomb. A sharp, limestone-driven acidity cuts right through the mid-palate volume, keeping it fresh. Subtle notes of white flowers and brioche add a savory depth to the mouthfeel. It finishes clean and bone-dry.
