Sourced from certified biodynamic parcels in Chassey, this ancestral-method sparkler pairs pinot noir with aligoté grown in clay-limestone soils rich in Oxfordian marl. Fermented naturally with indigenous yeasts, the wine finishes its fermentation inside the bottle without any added sulfur or dosage, preserving the raw tension of the fruit. This is a bright, unadorned expression of northern Burgundy sparkling winemaking.

It pours a pale, hazy coral with a delicate, fine effervescence. Aromas of tart red currant, crisp green apple, and damp stone shift into a palate filled with sour cherry, citrus zests, and a light touch of yeastiness. The mouthfeel is crisp and persistent, driven by high natural acidity and a chalky, mineral core. It concludes on a clean, snappy finish defined by a lingering note of pink grapefruit pith.
