This dry white wine is crafted by the de Villaine family from ancient strains of aligoté Doré grapes in Bouzeron. Sourced from pristine slopes surrounded by dense forests, the single-vineyard parcels are managed under strict certified organic viticulture protocols. Fermentation occurs spontaneously with native wild yeasts in large, neutral oak barrels. This low-intervention cellar process focuses on capturing natural texture and structural longevity, completely bypassing modern chemical adjustments or additions.

It displays a bright straw-gold color, releasing refined aromas of white flowers, fresh citrus, and a hint of cream over a distinct background of petrichor. A medium-bodied, texturally driven frame balances crisp orchard fruit flavors with an underlying stony mineral core. A sharp wave of natural acidity cuts directly through the volume, maintaining excellent freshness. The texture is smooth yet perfectly focused across the mid-palate. It finishes long, dry, and clean, leaving a saline trail.
