Produced by Gérard Courrèges in the Ajaccio region of southern Corsica, this dry white wine is made exclusively from the vermentino grape. The estate manages its twenty-seven hectares of vines on granite sandstone hillsides under strict certified organic viticulture protocols since 2019. The hand-picked grapes undergo spontaneous fermentation with native wild yeasts in a mix of clay eggs and seasoned demi-muid oak barrels. This low-intervention process focuses on capturing natural texture without wood flavor dominance.

It pours a pale straw color, releasing refined aromas of ripe citrus, wild fennel, and warm stone. On the palate, a medium-bodied frame balances orchard fruit flavors with a taut, vertical line of mineral acidity. Clean flavors of grapefruit rind and white peach seamlessly wrap around an ample mouthfeel. A strong vein of mountain salinity cuts right through the wine, keeping the texture fresh. It finishes long and dry, leaving a pleasant aniseed trail.

Domaine de Vaccelli is a family-run winery located in the southern part of the Ajaccio appellation on the island of Corsica. Owned by the Courrèges family, the estate is renowned for producing elegant, terroir-driven wines from native Corsican grapes. Winemaker Gérard Courrèges, who took over from his father in 2000, has elevated the winery to international recognition. The estate has been farmed organically since 2008 and received organic certification in 2019. All vineyard work is done by hand. Gérard has integrated modern techniques while preserving tradition, using concrete eggs and large demi-muids (600-liter barrels) for fermentation and aging to allow the terroir to shine.
