Grown in biodynamic clay and red marl soils of the Arbois appellation, this cuvée comes from Fabrice Dodane's meticulously tended Jura vineyards. The hand-harvested fruit ferments spontaneously with indigenous yeasts in stainless steel and neutral wooden vats using semi-carbonic maceration to preserve aromatic lift and pure fruit expression. Aging takes place in neutral oak barrels without fine-tuning, fining, filtering, or added sulfur, keeping the grape's delicate, wild nature intact. This is a bright, unadorned Jura red focused on fresh fruit purity and mineral tension.
A translucent ruby color in the glass introduces lift-driven aromas of wild strawberry, sour cherry, damp earth, and crushed red peppercorn. On the palate, flavors of cranberry, tart red plum, and dried rose petals are supported by light, fine-grained tannins and a vibrant beam of natural acidity. The weight is nimble and light-bodied, offering a crunchy, energetic mouthfeel that stays clean and focused. It finishes dry and refreshing, with notes of citrus zest and crushed limestone.
Stéphane Tissot and his wife Bénédicte have 35 hectares of vineyards “cultivated in bio-dynamic viticulture (certified by Demeter) to allow the soils to live, to have grapes untouched by chemical products, to allow natural yeast fermentations, to reduce the doses of sulfur in the cellar.”

André and Mireille Tissot founded their estate in 1962, in the village of Montigny-les-Arsures, in the Jura. Stéphane took over from his father with a new vision and converted it to chemical-free farming, organic and then biodynamic. They are meticulous in their farming and in the cellar, producing up to 28 unique cuvees.
