The "Bibendum Rouge" is 100% Cinsault, a grape that thrives in this rugged landscape when handled with precision. Jacquart utilizes whole-cluster fermentation and long, gentle maceration in neutral vessels to let the delicate nature of the Cinsault shine. Bottled unfiltered and without any added sulfur, the wine is "alive" and highly aromatic, offering notes of bright red berries, dried rose petals, and a distinctive silkiness that makes it one of the most elegant examples of the variety in the region.
It is a beautiful bright ruby color and a delicate aromatic profile of raspberry, red cherry, and violets, accented by subtle hints of black pepper and herbal spice. On the palate, the wine is light to medium-bodied and zesty, offering a "crunchy" fruit texture, fine, soft tannins, and a clean, mineral-driven finish.
Domaine de la Grande Colline sits high on the steep granite slopes of Cornas overlooking the Rhône. The estate was established by Japanese vigneron Hirotake Ooka and is now led by Jonathan Jacquart, who trained with Emmanuel Reynaud, Thierry Allemand and several other leading French domaines before taking over in 2018. Jacquart continues the property's chemical-free farming while adding biodynamic practices, animals and greater biodiversity. The Syrah is vinified simply, often with whole bunches, gentle extraction and neutral barrels, producing Cornas of dark fruit, pepper and savory depth tempered by the freshness of the domaine's high-altitude sites.
