This low-intervention red wine is a pure expression of pinot noir produced by Christian Knott and Morgane Seuillot in the Hautes-Côtes de Beaune. Sourced from organic and biodynamic plots, hand-harvested fruit undergoes whole-cluster fermentation driven by native yeasts in old wooden vats. Cellar protocols skip mechanical pumping and filtration, relying on gravity to clarify the liquid naturally. Matured without added sulfur, it offers a transparent look at regional limestone soils.

It radiates a clear ruby hue, opening with floral aromas of rosehip, red cherries, wild strawberries, and fresh mint. On the palate, the light-to-medium body is fluid and precise, balancing crunchy berry flavors with a silky texture. Savory layers of earthy tea and dark mineral spice develop nicely as the fluid mouthfeel expands. A clean wave of mountain acidity keeps the texture refreshed throughout. It finishes with lean mineral tension and blood orange.

Winery

Domaine Dandelion was established in 2016 by Morgane Seuillot and Christian Knott in Mavilly-Mandelot, in Burgundy’s Hautes-Côtes de Beaune. Morgane is from the area, while Christian came from Australia and developed his cellar experience in Burgundy. Their small holdings include old vines of Pinot Noir, Aligoté and Gamay. Organic farming with biodynamic influences, work by hand and the use of horses reflect an approach in which the condition of the vineyard takes priority over convenience.

The cellar follows the same quiet logic. Whole-cluster fermentations, gentle handling and aging in used barrels allow the fruit to develop without forceful extraction or the flavor of new oak. The wines are made without added sulfur and without fining or filtration. Hautes-Côtes Nature sits alongside other still and sparkling cuvées, each shaped by the available grapes and the growing season. Dandelion’s appeal comes from the combination of small-scale, demanding vineyard work and wines that retain a particularly direct, delicate connection to their Burgundian origins.
