This low-intervention red wine is a pure expression of pinot noir produced by Christian Knott and Morgane Seuillot in the Hautes-Côtes de Beaune. Sourced from organic and biodynamic plots, hand-harvested fruit undergoes whole-cluster fermentation driven by native yeasts in old wooden vats. Cellar protocols skip mechanical pumping and filtration, relying on gravity to clarify the liquid naturally. Matured without added sulfur, it offers a transparent look at regional limestone soils.

It radiates a clear ruby hue, opening with floral aromas of rosehip, red cherries, wild strawberries, and fresh mint. On the palate, the light-to-medium body is fluid and precise, balancing crunchy berry flavors with a silky texture. Savory layers of earthy tea and dark mineral spice develop nicely as the fluid mouthfeel expands. A clean wave of mountain acidity keeps the texture refreshed throughout. It finishes with lean mineral tension and blood orange.
