This white wine comes from the Coteaux du Giennois appellation in the eastern Loire Valley, managed under sustainable viticulture practices. The sauvignon blanc grapes are hand-picked from rows rooted in complex siliceous clay and limestone soils that naturally protect natural acidity. The winemaking utilizes low-intervention protocols, featuring a cool fermentation driven entirely by native wild yeasts in temperature-controlled stainless steel vats. It ages on its fine lees for several months to encourage textural balance without wood manipulation.

It pours a pale straw-yellow color, releasing clear aromatics of fresh citrus, green apple, pear, and subtle floral notes. A sleek, medium-bodied frame balances orchard fruit flavors with an underlying stony mineral core. A lively, electric acidity slices directly through the mid-palate, providing excellent structural tension and freshness. A touch of herbal freshness complements the clean mouthfeel without adding heavy volume. It finishes completely dry and crisp, leaving a lingering mineral trace.

Domaine de l'Estang is a small, low-intervention winery in the Loire Valley, France, founded in 2004 by winemaker Bertrand Graillot. He produces expressive, mineral-driven Sauvignon Blancs from two different appellations, Sancerre and the nearby Coteaux du Giennois. Graillot works with minimal intervention in his winemaking, opting for native yeast fermentation, aging on fine lees, and using very little sulfur. The vineyards are farmed organically, though they are not officially certified. The grapes are harvested by hand.
