This natural sparkling wine is an artisanal col fondo style field blend produced from a single biodynamic vineyard in Wiltshire, England. The cuvée combines chardonnay, pinot noir, pinot meunier, and pinot gris, grown on chalky soils that lock in high acidity. The winemaking utilizes spontaneous native yeast fermentation in neutral vessels, avoiding modern filtration or synthetic chemical corrections. It is bottled under a crown cap unfiltered, leaving the natural fermentation lees inside the bottle to add textural complexity.

It pours a hazy, very pale apricot hue with a lively, rustic effervescence. The nose opens with fresh aromas reminiscent of a grower sparkling wine, showing tart green apple, white peach, and yeasty notes. On the palate, the light-bodied frame is bone-dry and exceptionally clean, delivering crunchy stone fruit profiles with a mineral tension. A sharp wave of cool-climate acidity cuts right through mid-palate volume, keeping the mouthfeel thoroughly refreshed.

Domaine Hugo is an English wine producer known for its small-scale, artisanal sparkling wines. The estate is a collaboration between biodynamic viticulturist Hugo Stewart and winemaker Daniel Ham of Offbeat Wines. Following extensive experience with biodynamic farming in France, Hugo Stewart returned to his family farm to establish the winery in 2015. The vineyard is fully organic and biodynamic, focusing on creating a healthy ecosystem by using practices such as natural cover crops and allowing sheep to graze. The winery has earned a strong reputation for quality. It is the only English member of the prestigious biodynamic association Renaissance des Appellations.
