This rare red wine is a zero-zero pinot noir cuvée crafted by Christian Knott and Morgane Seuillot in Burgundy. The liquid is built from press juice left behind when racking their three core vineyard bottling lots. These components blend together and mature for six months on full fermentation lees in seasoned wood barrels. The estate farms biodynamically using horse plowing, utilizing manual presses and bypassing all additives, filtering, or sulfur corrections.
It displays a translucent ruby hue, releasing a rustic bouquet of wild raspberries, red currants, and forest floor. On the palate, the light-to-medium body feels compact and tightly wound, balancing red fruit energy with a serious structural line. Savory notes of damp earth and cracked black pepper blend with a signature charm across the mid-palate. A clean wave of mountain acidity cuts through the texture, maintaining great freshness. It finishes bone-dry, leaving a light trail of spice.
