This natural sparkling wine is a traditional pét-nat blend crafted by Stéphanie and Vincent Deboutbertin in the Loire Valley. The cuvée combines chenin blanc, pineau d'aunis, and grolleau from organically farmed plots rooted in schist soils. The winemaking utilizes a single continuous fermentation that begins in neutral vats with native wild yeasts and finishes directly inside the bottle. Moving the juices entirely by gravity, the producers bottle the wine unfiltered without any added sulfur.

It pours a lightly cloudy straw-pink color with a lively, effervescent mousse. The nose opens with intriguing aromas of white pepper, dried roses, and fresh green apple. On the palate, the light-bodied frame is fresh and incisive, balancing tart orchard fruit flavors with a distinct mineral baseline. The extended lees contact provides a clean, texturally detailed mouthfeel that carries through the mid-palate volume. It finishes bone-dry and clean, leaving a mouthwatering trace.

Deboutbertin is a small-scale, natural wine producer. The winery is run by Stéphanie Debout and Vincent Bertin, who left their engineering careers to pursue winemaking. They focus on minimal intervention and a holistic approach to viticulture. They use agroforestry techniques, interplanting their vines with other trees and plants to create a healthier ecosystem and avoid monoculture. All vineyard work, including plowing, is done by their horse, Anatole, minimizing their carbon footprint. They primarily work with Chenin Blanc, Pineau d'Aunis, Grolleau, and Cabernet Franc.
