Produced by Stéphanie and Vincent Deboutbertin, this natural red wine is made exclusively from hand-harvested grolleau noir grapes in the Loire Valley. The estate manages its vineyards organically, focusing on low-intervention methods to emphasize the elegant side of a native regional variety. Spontaneous fermentation occurs with indigenous wild yeasts in neutral vessels, completely avoiding modern extraction adjustments. The wine settles naturally without any added sulfur or filtration to protect its raw structural profile.

It pours a clear ruby color, opening with expressive aromas of deep berry fruits, fresh thyme, and dried fir needles. On the palate, the light-bodied frame is juicy and direct, focusing on an ever-changing fruit presentation that brightens with aeration. Savory undertones of clove and vine leaf blend smoothly into the red berry core. A clean, central thread of natural acidity runs through the center, maintaining excellent freshness. It finishes completely dry and clean.

Deboutbertin is a small-scale, natural wine producer. The winery is run by Stéphanie Debout and Vincent Bertin, who left their engineering careers to pursue winemaking. They focus on minimal intervention and a holistic approach to viticulture. They use agroforestry techniques, interplanting their vines with other trees and plants to create a healthier ecosystem and avoid monoculture. All vineyard work, including plowing, is done by their horse, Anatole, minimizing their carbon footprint. They primarily work with Chenin Blanc, Pineau d'Aunis, Grolleau, and Cabernet Franc.
