Sourced from small organic plots in the Loire Valley, this low-intervention red wine is made from the ancient pineau d'aunis grape. Winemakers Stéphanie and Vincent Deboutbertin utilize a hands-off approach in the cellar, letting wild indigenous yeasts drive the fermentation. The fruit undergoes a gentle, short maceration to prioritize high-toned aromatics and structural freshness over dark color extraction. The final wine is bottled entirely unfiltered, unfined, and without any added sulfur.

It radiates a pale red color that sits just shy of a rosé, opening with aromas of zippy red berries and cracked white pepper. On the palate, the light-bodied frame is exceptionally fluid and precise, balancing crunchy red currant fruit with a distinct mineral tension. Subtle notes of rose petals and a touch of savory reduction develop nicely as the wine breathes. A bracing wave of mountain acidity cuts through the texture. It finishes dry, leaving a clean trace.

Deboutbertin is a small-scale, natural wine producer. The winery is run by Stéphanie Debout and Vincent Bertin, who left their engineering careers to pursue winemaking. They focus on minimal intervention and a holistic approach to viticulture. They use agroforestry techniques, interplanting their vines with other trees and plants to create a healthier ecosystem and avoid monoculture. All vineyard work, including plowing, is done by their horse, Anatole, minimizing their carbon footprint. They primarily work with Chenin Blanc, Pineau d'Aunis, Grolleau, and Cabernet Franc.
