De Fermo is a biodynamic and low-intervention winery in Loreto Aprutino, within Italy's Abruzzo region. Run by the husband-and-wife team of Stefano Papetti Ceroni and Eloisa de Fermo, the estate focuses on expressing the pure terroir of its vineyards. The estate's history of viticulture dates back to the 9th century. When the current owners took over in 2009, they restored a long-abandoned 18th-century cellar. The estate's vineyards have been certified biodynamic since 2010, and this holistic farming method is applied across the entire farm, which also grows olives, legumes, and cereals. The winemakers embrace a "hands-off" philosophy. Fermentations occur spontaneously with native yeasts, temperatures are not controlled, and wines are bottled without fining or filtration.
