Agronomist Federico Curtaz handles the hand-picked fruit with low-intervention protocols to capture site specificity and acidic tension. Spontaneous fermentation relies entirely on native wild yeasts inside temperature-controlled stainless steel tanks, avoiding wood barrel contact. The wine matures on its fine fermentation lees until summer to encourage natural structural depth prior to bottling.
It displays a pale straw-yellow color with greenish hues, releasing clean aromas of green apple, fresh pear, and white blossom skin. On the palate, a sleek, medium-bodied frame pairs crisp orchard fruit flavors with an underlying smoky mineral core. He applies his vast experience from the meticulous Gaja vineyards to the unique environment of Etna.
